Fresh Tomato Pie

Tomato Pie
1 recipe flaky pie crust
4 large ripe tomatoes
1 finely chopped shallots
1 finely minced garlic clove 
3 tablespoons minced fresh chives 
2 teaspoons fresh thyme
1 cup fresh basil
4 tablespoons mayo
4 tablespoons olive oil
4 dashes of hot sauce 
3 large eggs
2 cups grated cheddar 
2 cups grated parmesan 
5 chopped green onion 


Either make your own pie crust or Trader Joes has a great frozen one. Here is the link for the pie crust I used. Butter pie pan or pie baking dish well place pie crust in pan. Return to refrigerator to stay cold while preparing remaining items. 

Slice tomatoes then place them on a paper towel and let drain for 10 minutes. 

In food processor mince garlic, add olive oil, mayo, hot sauce and eggs pulse until mixed well. Then add all the basil leaves last pulsing just enough to chop the basil.

Layer tomatoes in dish with pie shell, then pour little of the basil mixture, layer of cheddar cheese, sprinkle chives, shallots, green onion, parmesan cheese on top. Then do another layer of all, tomatoes, cheese, chives, shallots, green onion, parmesan and thyme. 


Bake in 375 oven for 20-25 until golden brown on top
We love home grown tomatoes from Mississippi. When we are able to get a few we always enjoy a fresh tomato pie. I am sure you will enjoy this recipe as well. This recipe will make 2 pies. You can bake them both or freeze one for later use.
