Mini Wedding Cakes

Oh, how…. I love, little tiny baby cakes……  I had a dear friend’s daughter getting married.  A friend and I gave her a sweet little wedding shower. I wanted to attempt to make a batch of the little tiny cakes for the wedding shower favors. Brownies are one of my favorite things to use for this and brownies are firm enough to work well. I think they came out darling. I made my regular brownie recipe without the nuts. I was afraid the nuts would cause issues when cutting them, or not look nice once the cake was completed. I found a set of three cutters in the hobby clay section at Hobby Lobby. The cutters where perfect size for the tiny glass cake stands.

 

Brownie Recipe

1 cup butter, soften
6 oz. semi-sweet chocolate, chopped
2 cup sugar + 4 tablespoon
6 large eggs
1 teaspoon instant espresso powder
4 teaspoons vanilla
1 teaspoon salt
2 cup bread flour
6 tablespoon dark cocoa powder

Bake in a parchment paper covered baking pan – butter parchment paper makes easier to remove
Bake at 350 for 20 minutes

Melt one tablespoon of the butter add the chocolate and let melt. Let cool and set aside. Cream remaining butter with sugar until light and fluffy, add one egg at the time until each is incorporated. Add espresso, salt and vanilla to the butter mixture. Sift the flour and cocoa together add to butter mixture,  add your melted chocolate once all combined. Place in prepared pan and bake for 20 minutes. Place in refrigerator over night this makes easier to cut.

I removed the brownies from the pan and then cut with the cookie cutters.

Place a large dollop of the chocolate icing on the cake stand. Then add the largest round layer, another dollop of chocolate icing. Add the middle layer, another dollop of icing, then add the top of the cake.

I made a batch of royal icing to make the tiny little dots all around the little cakes.  I topped the cake with a small pink flower.

I found a pink ribbon as close as I could to the flower color and tied a small bow to the top of the cake stand. I was so please with the end results think they came out really cute. A sweet little wedding cake for such a sweet girl’s special day. Wishing you all the best life has to offer.
