Amazing Bourbon Sweet Potatoes

Every year I end up making a different sweet potato recipe. Most are really good, don’t get me wrong. But, many years ago I went to a dinner and they served….. well lets just say I am still trying to find one I love as much as theirs…Oh my Goodness!  The Best! They would not share the recipe, oh at the nerve of them. Grrrrr So, back to the hunt on my own. This is an incredibly easy recipe. That is the part I love. EASY!! Yet really great! Okay this isn’t the best photo, why I got a little carried away with the marshmallows…yes, I love roasted marshmallows.

Sweet Potatoes
3 pounds sweet potatoes baked and peeled
1/4 cup dark brown sugar
1/4 cup unsalted butter
1/8 cup Jack Daniels or bourbon
1/2 teaspoon salt
1/2 teaspoon ginger
1/2 teaspoon cinnamon
1/8 teaspoon ground allspice
1/8 teaspoon fresh grated nutmeg
1/8 teaspoon fresh ground pepper
1 teaspoon vanilla
1/2 teaspoon orange zest
3 tablespoon fresh orange juice
4 ounces crushed pineapple with juice ~ about half a small can
2 large eggs
1 bag of small marshmallows, about 2 cups

Preheat oven to 350

Bake potatoes for one hour or more until soft and tender. Once cool remove skins. Add potatoes to food processor with everything but the marshmallows. Puree the mixture until completely smooth. Transfer mixture to a buttered baking dish. Bake sweet potato mixture for 30 minutes at 350. Then add marshmallows just enough to cover the top of the potatoes and bake/broil until then are nice and browned about 1-2 minutes. Be Careful if you use broiler not to burn them. Do not walk away from the oven …conceder yourself warned!
