Small Batch Brownies….in a tiny skillet

2015-11-10_002I had the folks from the magazine Southern Cast Iron Skillet send me their new magazine. I will say, I love it…really do has so many wonderful recipes I can’t wait to try. They are also offering 20% off Code “SK” to any readers who want to try the magazine.2015-11-10_004 I had several recipes I wanted to try but this is the one that won my heart …..I will say it was really good. I was having friends over and this made a quick easy impressive dessert. Everyone loved them…and they loved the presentation. I did cut the recipe in half and it still made 5 small skillets.

 

Chocolate Skillet Brownies

5 tablespoons butter ~ plus 1 tablespoon for skillets
2 ounces unsweetened chocolate chopped
3/4 cup light brown sugar
2 large eggs
1/2 + 1/3 cup all purpose flour
1/2 teaspoon Maldon salt
1 teaspoon vanilla
1 cup chopped walnuts

Vanilla Ice Cream and Chocolate Syrup to serve on top

This recipe was adapted from the Southern Cast Iron Skillet premiere issue.

2015-11-10_001First preheat oven to 350

Melt 5 tablespoons butter in a small saucepan and chocolate pieces over a low heat until chocolate is melted. In another large mixing bowl beat sugars, eggs, and vanilla on high speed until fluffy. Turn to low speed, add flour and salt to combined. Stir in melted chocolate and butter. Then add nuts mix till incorporated.
In cast iron skillet place a small pad of butter and place skillet in oven to preheat. Once skillets are hot and butter melted carefully spoon batter in skillets. I sprinkled a little more of the Maldon salt on top. Bake in oven till firm, these small skillets took 15 minutes. Top with Ice cream, chocolate syrup, chocolate sprinkles and serve.

I will say it was a real hit…Thanks for the great idea and the wonderful new book.
