This is such an easy recipe, had a request to share, so here we go. I have posted several ways to candy pecans. This is yet another way to make them, this may be the easiest. They all have a different taste and flavor. This can be done in just a few minutes.
Candied Pecans
2 cups pecans
1/2 cup firmly packed light brown sugar
2 tablespoons orange juice ~ I used fresh, any is fine
1 tablespoon butter
1/2 teaspoon vanilla paste
Maldon Sea Salt
Buttering a microwaveable dish, set aside. I have found a pyrex glass pie pan works best. Mix brown sugar, orange juice, vanilla and pecans. Mix until all pecans are all coated well. Pour pecans in pie pan and microwave on high for 5-6 minutes, stirring every minute or so. I have to cook mine for almost 6 minutes. The sugar needs to boil and reach candy stage but there is a fine line between boiling and burning the pecans. When the microwave is completed, immediately pour pecans onto buttered tin foil and spread evenly separating them. I lightly sprinkle them with the sea salt. Allow the pecans to cool before packaging them. This takes about 3 hours. I use these to top desserts, salads, hostess gifts, even serve them on my cheese board.
* I have even made them and taken the orange juice and substituted heavy cream humm really good.
