Cranberry Walnut Bread

2015-02-14_009This is a great bread to have in the morning with your coffee, it is also a great little bread to give as a gift to someone. It is a great little bread to have around during the fall or Christmas season. When you have company, it is nice to just have around. I like to bake it in little loafs keep one and take the other two to friends. Hope you enjoy them as much as we do. They are a little tart with the fresh cranberries and fresh orange. We love to put a little butter on them and toast them oh goodness…yum!

Cranberry Walnut Bread

1/3 cup fresh orange juice
1 tablespoon grated orange zest
2/3 cup buttermilk - not fat free
6 tablespoons butter - melted
1 large egg - lightly beaten
1 teaspoon vanilla paste
2 cups all- purpose flour
1 cup sugar
1 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon baking soda
1 1/2 cup fresh cranberries - frozen chopped in half
1 cup walnuts - chopped

1 tablespoon fresh orange juice to brush tops of loafs
1 tablespoon coarse sugar to sprinkle on tops

2015-02-14_007Stir together orange juice, orange zest, buttermilk, butter, egg, and vanilla in a small bowl with a whisk. In another bowl whisk together flour, sugar, salt, baking powder, and baking soda mix until all incorporated. Stir the wet ingredients into the dry until just incorporated, do not over mix. Place your batter in desired loaf pan. After the bread is still warm remove to a wire rack, brush with orange juice and sprinkle with coarse sugar. Slice once cooled.

Bake at 375 – 20 minutes then lower to 350 for about 45 minutes

Bake in small loaf pans or one large. Butter loaf pans and line with parchment paper.
