Son was home this weekend and he got up early and said I think I am going to make madeleines…..mom can you find the madeleine pan? So, we had to stand on our heads to find this silly pan. We found the pan success. I explained to him they are not the easiest things to make……silence….Okay then, here we go. He got right to work. Dang they turned out perfect they did, amazing. I was so impressed he said you can put this on your little blog laughing at me? Well, I will I said, I hope you enjoy them as much as we did. Smiles and Happy Baking!
French Madeleines
3 large eggs
1/2 cup sugar
1/2 teaspoon salt
1/2 cup self rising flour
1 teaspoon vanilla
1/4 cup melted butter
1/4 cup powdered sugar
Pre-heat oven to 375.
Whisk the eggs and sugar together with a large whisk until batter is light and creamy in color. This is will take a few minutes. You can do this in a mixer as well. Then sift the flour in the egg mixture, continue to mix until well mixed. Add a good pinch of salt and vanilla once completely mixed, add melted butter pouring slowly on the side of bowl mixing while pouring. Let batter rest while buttering and flouring the madeleine pan. Lightly butter pan, sift a small amount of flour over pan, knock the pan to remove the excess flour. Place batter in a large pourable measuring cup. Pour the batter just to the top of the pan. Bake for 9 minutes at 375 remove by knocking the pan on the counter and place on a wire rack until cooled. Dust with powdered sugar, serve and enjoy.
* We did not have self rising so we added a tiny pinch of baking soda and baking powder.

yum i can never go past a good madeleine! these look delicious.. i am definitely inspired to bake my own batch now.
There is nothing like a classic Madeleine! One cute variation I saw in a cookbook (and used for a beach-themed wedding I catered) was a petite choc. madeleine “oyster” (you could make the full sized ones). You pipe choc. ganache on the flat side of one cookie and place a silver dragee on the side, then place another cookie on top (top side up). They are so cute!
