Creamed Cabbage Soup

March 1, 2014 by Angie 5 Comments

Angie's Creamed Cabbage SoupWe went to Cologne Germany a few months ago. One evening we all went on a beer crawl we had a blast…is all I will say. I am sure we got a little loud and made fools of our selfs, any way we did have a lot of fun. We fell in love with their beer and cabbage soup…who knew cabbage soup could be so good, not me? I am sorry cabbage soup just sounds awful to me it…really does, but I have a new opinion of the whole cabbage thing now after our trip to Germany. Keep an open mind, right? I mean it is really is so good, really good. Not at all what I was expecting. After getting home I could not get that soup off my mind. I got in the kitchen and got to work. My son was home for the weekend and he had the same reaction I did yuk what ever did you make that for…. gross…then he tried it, he did not come up for air. We stood there laughing he looked up and said boy this is really good mom, really delicious what did you put in that? yea, it is good huh? This is a great recipe for this time of the year….hope you enjoy it!
ingredients for creamed cabbage soup

Creamed Cabbage Soup

1 head of cabbage shredded
1 quart of chicken stock
2 minced cloves of garlic
1/2 finely minced onion
1 cup chopped country ham
1/2 stick butter
2 tablespoon all-purpose flour
8 oz sour cream
8 oz cream
1 cup buttermilk or milk
1 tablespoon lemon juice
fresh ground pepper
1 teaspoon salt
In a large dutch oven sauté onion and butter until onions are clear, add ham cook until ham is browned a bit. Then add the flour and let cook for 2 minutes stirring continually. Add garlic stir and let sauté for 30 seconds then add your chicken stock, cream, buttermilk and cabbage. Stir well and add remaining ingredients and cook for about 30 minutes. I shredded the cabbage in the food processor. This is a quick easy recipe.
