Angie’s Cracker Candy

Angie's Cracker Chocolate CandyMr. Fix it had a project at Lake Oconee a while back. When he would go up he would bring me back this candy from a local bakery. I would get so excited each time he would bring it back and sad each time he would be empty handed. Some times they would be out…boo hoo? Then the project was over GOSH what was I going to do….I hunted and hunted for the recipe. I came up with one and have been making these for a few years now. It is easy nothing fancy in this recipe. They have chocolate and peanut butter in them what could be better?
Ingredients for Cracker Candy

Angie’s Chocolate Peanut Butter Cracker Candy

1 sleeve of saltine crackers
1 1/2 cup sugar
1/2 cup evaporated milk
1/2 stick butter
1/3 cup smooth peanut butter
1 teaspoon vanilla
1/2 cup toasted almonds
6 to 8oz semi-sweet chocolate chips
1 teaspoon butter
Crackers on lined foil pan
Line a baking pan with foil and butter bottom and sides. Lay saltines in baking pan. Preheat oven to 400.
In a sauce pan combine sugar, milk and butter. Bring to a boil without stirring for 3 minutes. Add vanilla to this mixture and stir at this point.
Steps to making the Cracker Candy
Pour over crackers and spread out evenly. Place in hot oven, bake for 4 minutes while this is baking heat peanut butter. Pour the peanut butter over the crackers and spread out evenly. Then top with chocolate chips, let sit for a minute then take off set scapular and spread even, top with toasted almonds. Let harden and cool. Once the candy has set up break into pieces. Bag and share…yum!
