Homemade Mini Peppermint Patties

Angie's Home made Peppermint Patties
I do love peppermint patties…oh goodness so this is something I really should not ever make WHY cause I eat them all myself that is why! These are a great gift idea for the holidays. Yummy! The kids around my house love them too. Last time the whole container was gone in one hour. Gosh boys guess ya liked em…huh?

Homemade Mini Peppermint Patties

1 jar 7oz marshmallow cream
10 tablespoons butter room temperature
1 teaspoon vanilla paste
2 teaspoons peppermint extract
6 cups 10X powdered sugar
1 package 16oz dark chocolate candy coating

Angie's Home made Peppermint Patties
In a standing mixing bowl, cream marshmallow, butter, and extracts until light fully and all combined. Start adding in powdered sugar one cup at the time and mix on medium speed until well blended. This may take a few minutes for it to come together.
Line 2 large baking sheets with parchment paper. Using about 1 teaspoon of filling, shape into a ball, then flatten, place on parchment paper, continue until all filling is used. Cover with plastic wrap and freeze for about 2 hours or overnight.

Melt chocolate according to package directions. Using a toothpick, dip frozen peppermints into the chocolate. Tap until all the excess chocolate off has dripped off, run bottom over dish to remove even more off bottom. Place back on the parchment paper. Repeat until all peppermint patties have been coated in chocolate. These should be set within minutes, because you are working with them while mints are still cold. Store in a covered container at room temperature.
