If you spend any time what so every around me you to will be drinking ice tea…yes, you will!! I drink “Icced Teea” by the gallon. I make it at home ~ stop at Chick-fil-a and even go to QT to get theirs I love their ice. Any time you see me I will have one in hand. Now after years and years I have been consuming my tea straight up without any sweeteners. No Sugar oh dear me…bless your heart they say!! But, once you get use to it ~ it is just as good so there you go! Now when you are from the south and someone tells you awww darlin bless your heart ~~ clue here sweetie you are “fixin” to get an insult for sure or someone is…heee heee! Well…many of my friends have ask just how do you make iced tea see many of our mom’s do not cook any more and you just do not get it by osmosis. I am going to give you a how to make both Iced Tea and Arnold Palmers. We love Arnold Palmers.
1 ~ 2lb bag of fresh lemons juiced
6 tea bags
2 cups sugar
8 cups water
Start by bring 6 cups of water to a boil ~ you need to let it get to a rolling boil incorporating air into the water makes better tea.Turn your heat off then add 6 tea bags to the hot water and let steep for at least an hour. While your tea is steeping, juice your lemons. Now this part is somewhat tricky because every time you get a bag of lemons it renders a different amount of juice and each time the tartness is different too. So…with this method you are always ready to handle it. This time I got 1 3/4 cup of juice. Which is a lot of juice for one bag. Once this is done I make a simple syrup to sweeten my tea and Arnold Palmers. This is = parts sugar and water 2 cups water ~ 2 cups sugar bring the water to a simmer and add the sugar and let it melt stirring until all crystals are gone, set aside.Once all have cooled your are ready to mix your concoction.
For Arnold’s Palmer’s
4 cups of the tea
all the lemon juice
2 3/4 cups of simple syrup
Now with the beauty of this is you have more simply syrup if you need to sweeten it for your taste see we like it a little sour….like us!! heee heee Then you have tea left over to for those who just want plain tea. Then you have syrup for those who want sweet tea too. Now go sit out on the porch and enjoy the day!! With your fan….awww
