Creamed Spinach

creamed spinachWe at our house love creamed spinach. But, leave it to me to make spinach unhealthily hee hee oh well da gum it is really good any one would eat it this way. Believe me!! It is so, so good. This is a great make ahead dish for a dinner party too as a side dish. It comes out every time and holds really well. I have made this recipe for years and years. Try it and your family will love it too! It is rich creamy and makes spinach wonderful! I make it in a large dish or tiny ones for each person depending on the event.
ingredients for creamed spinach

Creamed Spinach

2 packages of frozen chopped spinach – defrost and remove all water
2 large eggs
2 minced cloves of garlic
2 green onions
2 tablespoons of butter-more for pan
juice of half of lemon
1 cup of grated parmesan cheese + plus a little more to sprinkle on top
1 cup of heavy cream
salt and pepper

This is so easy I start the food processor running and drop the garlic in and it will mince it nicely. Then I add the spinach, eggs, green onions, butter, parmesan, juice of lemon, and maybe a little zest too. Run the processor a round or two then I add the cream and run until all comes together. Then add to your buttered pan and bake at 350 for about 20 minutes. It will puff up a good bit kinda like a soufflé. Right before removing from oven top with a little more parmesan cheese and broil until golden brown on top. Wonderful side item!
