Well….When we go to my mom and dad’s house you can bet we will have blue berry waffles at least once while we are there. This is my favorite recipe for waffles, this recipe is a keeper. The waffles always come out crispy on the out side, soft and fluffy on the inside. The buttermilk gives them a much richer flavor. They are easy to make and always turn out. What could be better a nice hot waffle with butter and real maple syrup…yummmmmmm? My mom likes to chop up pecans and put them in the batter, I like to add mini chocolate chips to mine…I like to add chocolate to everything….well, I do!
Buttermilk Waffles
1 1/4 cups White Lily Self-Rising Flour
1/2 teaspoon baking soda
pinch of salt
1 tablespoon sugar
2 large eggs, separated
1/3 cup butter, melted
1 cup buttermilk
Add all the dry ingredients together flour, baking soda, salt and sugar set aside. In another bowl add buttermilk, egg yolks and the melted butter and mix well. Beat egg whites until stiff. Add the buttermilk mixture to the dry ingredients and mix until all incorporated. Gently fold the egg whites. Prepare waffle iron for use according to manufacturer’s instructions. Spray with cooking spray wait for beep or light to go off. Pour batter into center of waffle iron. I spread around with an off spatular, bake until steaming stops or beep sounds. Lift top and remove waffle with a fork. Serve immediately
I went home this weekend to visit and we did have waffles and we did have them with blueberries. These are some of the pictures from Miss Kitty, she is a funny one fur sure.

Had the recipe all made then looked inside the buttermilk carton and saw mold. Waaahhh!!!
So, I made some fake buttermilk with vinegar, and on we go. The kids are loving them!
