I had the wonderful experience of going to Greece. We all still talk about some of the pitas we had in a wonderful little village called Agia Pelaghia oh goodness what a wonderful little hide away. I do hope someday I can return and spend a little more time here. There is a little cafe right on the water, the water here is such a beautiful color of blue with a nice breeze off the ocean. The people are so warm and welcoming to visitors. The sand is not at all like our sand in the U. S., here it is like small little tiny gem stones of all different colors simply beautiful. Here many people will stack the stones on the beach into interesting shapes and designs. It is such a charming village, so quaint. I loved it here.
3 cups bread flour
5 tablespoons olive oil
1 teaspoon sugar
1 1/2 teaspoon salt
3 teaspoons yeast
1 cup water + 3 tablespoons
Place all ingredients in bread machine and run on dough setting/cycle. Once completed let rest a few minutes then cut into 3oz balls. Flour work surface and roll out in a round pizza shape until they are 1/4 inch thick. Place on a parchment paper lined baking sheet and cover with a cotton towel in a warm dry place for 30 minutes. Then bake in a hot oven at 500 for 8-10 minutes. Let cool and place in a bag or container. I then grill or place on a griddle with a little olive oil to toast the out side before serving.
kefalotyri or kasseri cheese or any hard cheese
1/2 cup of olive oil
1/3 cup of flour for coating the cheese
1 lemons to squeeze on after baking the cheese
I slice the cheese in thin slices so that it will fit into the baking dish I am planning to use. I coat each piece of cheese in flour well and shake off excess. Place in baking dish and pour enough olive oil to cover completely. Place dish on a baking pan and bake in oven at 400 for about 10 minutes until light golden. Squeeze lemon on after your remove from oven, must eat warm.
