I have had the flu for the last two weeks and it has taken me so long to get over this…wow. I have not felt like doing any thing. I was sick all through Christmas and New Years. Hopefully this next week the weather will be a little warmer and I can get back to enjoying life and food!
This is a great dish for cold winter day. I made this for my family in Mississippi and to my surprise they loved it. I could not believe my sister loved it the most. She has asked me many, many times to post it or make it again please it was so good. This is a one dish meal which is a great easy meal. I use a greek pasta that is like orzo noodles and the Greeks call manestra. The Greeks call this dish Keftedes with Manestra. Try it and you will love it as well.
Greek MeatBalls with Pasta
1 lb ground beef
1/2 lb ground veal
1/2 lb ground pork
2 large eggs
1 cup of heavy cream
1 cup sour dough bread crumbs ~ I take Trader Joe’s bread and grind it!
1 cup parmesan cheese ~ I use parmigiano reggiano Trader Joe’s
1/2 teaspoon fresh thyme baby leaves
1 teaspoon fresh chopped dill
1/2 teaspoon dried mint
1/2 teaspoon fresh oregano leaves
3 large cloves minced garlic
1 cup minced sweet onion
1 shallot minced fine
1 teaspoon salt
1/4 teaspoon fresh ground pepper
1/2 teaspoon red pepper flakes
In this recipe you can use half beef and half pork if you cannot find the veal. In a large mixing bowl you add the herbs, onions, garlic, salt, pepper, pepper flakes, cream and eggs mix really well. Then I add one pound of one of the three meats and mix well, adding a little of the meat and mixing until all the meat is mixed in completely. Then I sprinkle a little of the cheese at the time on top. Mix it in then sprinkle a little more, then mix again. Making sure it is well dispersed in the mixture. Then the same with the bread crumbs sprinkle on the top and mix, continue until it is completely mixed in. Roll meat balls into 1 inch balls and place in a generously buttered baking pan with some of the cooking liquid. I add all of the cream, wine, lemon juice and only 1 cup of the chicken stock and bake the meatballs at 375 until about done about 25 minutes.Baking Liquid + Pasta
2 tablespoons butter
1/2 cup cream
1/2 cup dry white wine
3-4 cups chicken stock
Juice of one fresh lemon
1 large egg ~ reserve till the end
2 cups uncooked pasta
Once the meatballs have cooked for 25 minutes, remove the meatballs and place on a plate. Then I add my additional chicken stock 2 cups to start and mix well then I add my egg and beat well making sure it is all mixed in with the other liquid. Your meatballs do render some liquid as well. Then add pasta, you may need to add your last cup of chicken stock at this point you want enough cooking liquid so your pasta is not dry. Then I place the meatballs back on top and cook until the pasta is done. This should be about 15 minutes. Once it is all baked together it makes such a wonderful flavorful dish. Then make a nice salad and you have a wonderful meal. Hope you enjoy this dish!
