Okay, I have been baking away this week…how about you? Well, you ask why no post well…see I made many of the same things last year. You can see them in old post just look over to your right. See I have old favorites and everybody wants the same thing from year to year. I let everyone pick one thing and then I have a long, long baking list but this way everyone has one thing they love. I have made date nut balls , sand tarts, thumb print cookies, puppy chow and gingerbread cookies. The only new thing I have made that is new for the blog this week is short bread cookies. I do love short bread cookies. Buttery, crispy cookies oh goodness so yummmmo and then, I love Toblerone candy bars I mean who doesn’t right unless there is something wrong with them. So…I said I am going to marry the 2 and wal la a really good combo. My favorite recipe for short bread cookies is the one from the Silver Palate Cook Book from way back when…
Toblerone Short Bread Cookies
3 sticks of butter, softened to room temp ~ I used Kerry
1 cup of confectioner sugar
3 cups all purpose unbleached flour
1/2 teaspoon salt
1 teaspoon vanilla
1/4 cup sugar
1 Toblerone candy bar 3.5 bar ~ rough chopped
Cream butter and confections sugar together until it is light and fluffy. Sift the flour with salt and add to the creamed butter, add the vanilla and blend thoroughly. I place the mixer on the lowest setting and sprinkle the Toblerone candy in the dough, while it is running slowly. Stopping the mixer right away not to over mix. Over mixing will cause the candy to melt, then you will not have the nice chunky bits of candy in your cookies. Gather dough in a ball and wrap in plastic wrap and chill for 4 hours. Roll out dough to 5/8 thickness, cut with cookie cutter. ( I rolled into a log and just sliced and rolled sugar and chilled again) Place cookies back in to chill for 45 minutes. Bake at 325 for 20 minutes cool on a rack. Cookies should not brown at all.
