I do love the flavor of pumpkin but I am not real crazy about pumpkin pie. Not sure why? But, I have never found a Thanksgiving dessert I am really excited over. Each year I try a new pumpkin dessert, never repeating the one from the year before. We love the chocolate delight and thought it would be good to make it into a thanksgiving treat. I was in Walmart and guess what I saw two new seasonal flavors Pumpkin Spice and Gingerbread so ah ha I say oh goodness lets see what we can do with this stuff. So, I removed the chocolate and vanilla flavors and added the pumpkin in place and it came out really good creamy, light and just as I had hoped. I had some friends have a time locating the flavor Pumpkin Spice so I checked and no one seemed to have it but Walmart oh I know I am not a fan either go ahead entertain your self…make a field trip to Wally World! Take your camera and enjoy your visit. Amazon on-line has it, little over priced hummm.
Pumpkin Delight
1st Layer
1 cup flour
1 stick butter
1 cup chopped pecans
1/4 cup powdered sugar
1 teaspoon vanilla
Mix together put in bottom of a baking dish 13 x 9 is good. Bake for 20 minutes at 350. Let cool ~ Note when adding to the little jars I bake in a 13 X 9 and crumble in the jars tends to get to hard baking in jars.
2nd Layer
1 cup powder sugar
1 8oz cream cheese
1 cup cool whip ~ real whipped kind
mix together and add the cooled cookie bottom
3rd Layer
2 boxs instant pumpkin spice
3 cups whole milk
mix well and add to the cream cheese layer
4th Layer
16oz cool whip spread over top of the chocolate layer
Top with grated nutmeg and chocolate
