I love blinis {BLee-nee}. I have tried to make blini many times over the years with many different recipes. I have used all sorts of different flours from buckwheat to whole wheat. I would end up throwing them away, they would be so heavy and gross. Now why couldn’t I master these silly little pancakes? Never the less I still loved them with smoked salmon and a cream cheese mixture oh yummy! I love them with chopped eggs, red onion, capers and caviar too. They are great for a party. The other day Mr. Fit It came home with a wonderful container of wood smoked salmon. All I wanted was blinis and salmon, it sounded so good. Well I did have a new recipe for blini so what the heck I am going to try one more time. I did not take pictures of the process WHY? cause I just did not think they would turn out. Oh… goodness they did turn out and oh they are great! A do over we call it meaning I would do it again. Loved them we all did! I made my batter and then placed it in a squeeze bottle and buttered the griddle and squirted little tiny pancakes all over and it made a mess of them! I placed them on a wire rack over the griddle to keep them warm and I made a 100 of them in no time and man oh man I tell you the boys ate em up and about 5 minutes I could not believe it ! While I was outside gettin my photo shots of the three I had on the plate that was all that was left I GUESSED they liked them?
Blinis
2 teaspoon yeast {what I use for the rolls}
2/3 cup warm water
2 tablespoons powdered sugar
2/3 cup whole milk
2 large eggs
1 1/2 cups bread flour
1/2 teaspoon salt
2 tablespoons melted butter ~ plus more for griddle
In a large bowl, add yeast, water and sugar. Let the yeast dissolve and sit for a few minutes, then add in the milk and eggs. Mix until well incorporated, then add the flour, salt and melted butter mix again to all is completely mixed together. Let rest for about 10 minutes. I poured batter into a squeeze bottle. Warmed griddle and brushed with butter. Griddle needs to be really hot before adding batter. Squeeze quarter size pancakes all over griddle and do not flip until you see bubbles. Cook on both sides until golden brown. Keep warm until eating.
I serve with smoked salmon, capers and a cream cheese mixture.
In the cream cheese mixture this time I put what was in the fridge and goodness it was wonderful! I put a bunch of stuff in the food processor and ran it until it is nice and creamy…
Cream cheese 1/3 cup ?
3 tablespoon butter
1 green onion
3 tablespoons creme fresh
2 tablespoons heavy cream
sprig of dill
salt and pepper
put a little dab on each pancake and a little salmon and a few capers and it was so dee-lish yum! yum!

The water in the blini recipe. Is that 2/3 “cup” or what of warm water? Or 2/3 of the yeast measurement. Need to get this right.
