This is such an amazing salad it is different than any if the greek salads you have ever had. We have a sweet dear friend Crysanthe she is such a dear, wonderful, sweet person. We all went to visit her and Nicko in Greece and this is the salad she made for us. Every time I make this salad I think of her and oh goodness she is a such an incredible cook. Please give this salad a try and I know you will love it too! It is so light and has such a fresh new taste will make you think of the Greek Islands.
Dressing
2 minced cloves of garlic
1 chopped green onion
1 lemon ~ juice of
10 fresh oregano leaves
1/3 cup olive oil
2 teaspoons white wine vinegar
salt and pepper
Start the processor running and while running drop in your whole garlic and it will mince it for you. Then add the green onion, lemon, oregano, vinegar, salt and pepper and run until all is chopped and mixed. Then in a slow stream add olive oil. Then add to your container and add the feta and shake. This is a great dressing on any salad or on sandwiches too.
Salad
arugula
1 head of romaine lettuce
1/4 cup red onion chopped
2 ribs celery chopped
2 green onions chopped
1/4 cup fresh dill
1/2 cup feta
Wash lettuces and I chopped the romaine really fine slices. Leave the arugula whole. Place all lettuces on plate and then add toppings and place dressing on right before serving.
