Chicken Pot Pie

Chicken Pot Pie
This is one of our favorite comfort family meals….but I do make it all from scratch but I will give you some short cuts and no matter which you take it will still be great. It is a great make ahead meal. I have given the pie crust in the previous post. I had tried many and this is the one I like best for everything. If you want to use a store bought pie crust knock your self out and go for it…might I suggest Trader Joe’s Brand it is pretty good. But come on you can make a pie crust!! Really you can!! Ingredients for chicken pot pie

Chicken Pot Pie

1/4 cup of butter
1/4 cup flour
1 1/2 cups whole milk
2 cups chicken stock ~ yes homemade
2 cups cooked chicken ~ I will show you how I do mine at the bottom
2 cups cooked potatoes
1/2 cup cooked carrots
1 teaspoon salt
fresh ground pepper
1 egg for top ~ egg wash
1 pie crust recipe link

I first make a roux, add the butter to a sauce pot and melt on a low heat. Once butter is melted completely you turn the heat up a little add the flour and whisk continually for 2 minutes. Then you add the room temperature chicken stock whisking continually next add your milk whisking until it becomes thick and bubbly. I like mine to be rather thick.

oh I do love this sauce…it is good in Mac`n`cheese too oh goodness on many things this very same combo. Deelish!!

Butter your baking dish you want to use and add your chicken, potatoes, carrots. Mix so each it is well distributed through out the dish.

Then pour your sauce over the chicken and potatoes. Roll your pie crust out and place on top, cut excess off.

pie curst I then brush the top with an egg wash or heavy cream sprinkle with a little salt and pepper and decorate I know, I know but it makes it look purdy! Bake at 350 for 30 minutes or until crust is a golden brown. chicken pot pie
This is a really yummy chicken pot pie…try it and you will agree. I add chicken that I have baked in this post but I will also boil a chicken and use the chicken from that or even get a rotisserie chicken. Be creative and cook the way your group likes.
