Baked Chicken

These are my dad’s chickens they are called ladies or yard birds. He has several different kinds each laying different size and different color eggs. Aren’t they cute….chickens are funny birds do you know, they cackle after laying an egg? They do, it almost sounds if they are laughing it is so, so funny it just rips me up every time I hear it. Guess I would too if I laid an egg wouldn’t you!! Think about it! Funny ! Most ladies in warm weather will lay one egg a day? Wow give that some thought? Sorry Sir there is one man in the group guess which one he is? See him ? Wonder what my neighbors would think if I got a few of these here fine ladies? I’d share the eggs with them… I think they would ring my neck, don’t you? huh enough on that idea.

Baked Chicken….I use this baked chicken recipe for many things…chicken pot pie, chicken salad, sandwiches and salads. Tomorrow I will post Chicken Pot Pie to go with this recipe. baked chicken

Baked Chicken

3-4 chicken breast ~ I use free range
1/3 cup dry white wine
1 chopped clove garlic
1/2 stick of butter-melted
2 green onions chopped
salt and pepper
Wash and pat chicken dry. Then place green onions, garlic in bottom of dish. Place the chicken on top of the onions. I brush the chicken with the melted butter and generously salt and pepper the chicken. I add the remaining butter to the dish and the wine. Bake in oven for 20-25 minutes at 350. Cool and slice.
