Creamy Shrimp Salad

Shrimp SaladWhen we were in St Augustine this last trip the ladies at the restaurant told us all the ingredients in the shrimp salad. But, mind you she would not give me the recipe which I understand dang it!! But, the mayo is the biggest part of this and theirs is different it is commercial mayo. I did the best I could to hit the mark on the Shrimp Salad now it was dang good but theirs was better which is not the case most of the time…why their shrimp is so much better than I can get and that mayo yes I could get it but who the heck needs or wants 5 pound jar of mayo NOT ME!! I made that cuban bread again and served a little green salad with it and it was a nice light dinner and the next day we took the left over shrimp salad and cuban bread and made a mean shrimp salad sandwich man oh man deelish!!
ingredients for shrimp salad

Shrimp Salad

1/12 pounds fresh shrimp
shrimp seasoning
2 lemons
1 sweet onion
1/2 cup mayo
4 tablespoons creme fraiche
1/8 teaspoon granulated garlic
1/4 cup chopped celery
1/8 cup chopped red onion
1/8 cup chopped green onions
salt and pepper

If you can get your fresh shrimp steamed/deveined at the store this will make this salad even easier for you. I was not able to do that at the fish market I was shopping today so a little more work for me. To cook my shrimp I put on a large pot of boiling water, to the water I add seasonings and this is to your taste. I use what ever is handy really ~ today the fish market had JR’s seasoning so that is what it is today….to this I had one lemon just cut it and add to the water, cut a sweet onion and add to the water. Once the water has been boiling for about 15 – 20 minutes I add my shrimp cover and let cook for about 3-4 minutes only! Then remove them at once, place on an ice bath. Once they are cool peel, devein shrimp and set aside.

In a large bowl I mix the mayo, creme fraiche, zest from one lemon, juice from 1/2 lemon, granulated garlic, celery, red onion, most of green onion {save some for top of dish} a little salt and fresh ground pepper. Mix all well and taste adjust to your liking. I like to add a dash of hot sauce and a dash of the Jr’s seasonings once this is all mixed really well then the last step is I add my shrimp and wal la a wonderful salad.
