The Columbia Restaurant Salad and Cuban Bread

We just went to St Augustine Florida for the week. There is a restaurant called the The Columbia we USE to love to go to….did you see the part use to. We all loved their 1905 Salad with 1905 Dressing. Long time ago they would make their own dressing table side and it was so, good. Now they have gotten with it as you might say and had that special sauce bottled to sale and that is what they use on their salads. Well, I am sorry I am going to tell it like it is ~ it is Not good ! The other was so much better. They use to print their recipes on their match book covers so I got one of everyone they had. I got this maybe 20 years ago. Thank goodness I did and saved them so I now can make it just like they did. Thank you The Columbia cause it is good! Great Summer salad, I make a cuban bread to go with it just like they had. I never did get their recipe for the bread but this is one of the best bread recipes so easy and NO FAT !! Until you smear butter all over it like I DO! I will post it tomorrow so it will be easier to file in my filing systems

ingredients for dressing

1905 Salad Dressing

4 minced garlic cloves
1 teaspoon dried oregano
1 teaspoon Worcestershire Sauce
1 lemon ~ juice of
1/2 cup olive oil
1/8 cup of white vinegar
salt and pepper

I start my processor running and drop the garlic in while it is going and wa` la it minces the garlic so nicely. Then I remove lid add the oregano, Worcestershire, lemon juice, vinegar, salt and pepper and whirl around and slowly add the olive oil in a small stream down the chute and wa` la a good dressing.

salad ingredients

1905 Salad

1/2 head iceberg lettuce
2 tomatoes diced
1 celery stalk chopped
3 oz swiss cheese chopped
3 oz ham chopped or julienned
1/4 cup pitted green spanish olives chopped
1/4 cup grated romano chesse

**I add to this recipe
2 cups arugula lettuce
2 green onions chopped/sliced thin
1 carrot shredded
Arrange ingredients in a serving bowl or platter. Prepare dressing and pour on right before serving.

    So glad you posted this! We went to the one in Sarasota a couple weeks ago, and I got one of these salads to go! We haven’t been in years because they have one hostess that is a family member, and she is sooooooooo rude! I did buy a bottle of the dressing, but the salad was not as good as I remembered it to be, and now I know why! Glad you posted the recipie!

    One more question – for those of us who are lazy (me!) I buy the garlic already minced – what is the conversion? LOL!!!

    Thanks…I hope you enjoy it as much as we do…I would add about 1 teaspoon of the minced garlic.
