Raspberry Salad with Goat Cheese and Raspberry Vinaigrette

I will say this is simply a beautiful salad it is….seeeee! Don’t you agree? We all love raspberries and are always looking for another way to get them into dinner…so here you go! This Raspberry Vinaigrette is a winner!

Raspberry Salad

Arugula
toasted pine nuts
chevre goat cheese
fresh raspberries
raspberry vinaigrette

Raspberry Vinaigrette

1/2 cup fresh raspberries
1 tablespoon white balsamic vinegar
2 teaspoons honey
1 teaspoon dijon mustard
pinch salt
pinch fresh ground pepper
1/3 cup olive oil
1 teaspoon fresh chopped chives

This is an easy vinaigrette to make. I place everything but the chives in the food processor and spin around until it is nice and mixed. Then I put it through the strainer to remove the seeds add the finely chopped chives and it is ready to serve.

I have even added a tablespoon of walnuts to this ~ oh my goodness wonderful for this I add the raspberries and the honey, vinegar a little of the oil and run through the stainer getting all the seeds out. Then place back in the food processor add everything else and just let it puree everything even the walnuts add a little more oil when adding the nuts ~ wonderful!
