Birthday Cake…Happy Birthday Baby!!

Today is my babies birthday….Happy Birthday to you!! Happy Birthday to you! Today my baby is “18” the big 18 wow wew where oh where did the time go ~ flew by! I cannot believe he is 18!! This is the cake I made last night, he usually wants coconut but he said I am tired of that. I ask what do you want he never would say so oh well I made a plain ole yeller cake with a coffee butter cream and oh dear me the best ever!! See I love a church lady cake is what we call it around here. Why cause when you go to a pot luck dinner at church you can be sure there will be one at each function. Everyone loves them and they are comforting in every way! So….Happy Birthday!!

Birthday Cake

4 cups plus 2 tablespoons or 480 grams “Swans” cake flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 sticks unsalted butter, softened
2 cups sugar
2 teaspoons pure vanilla
1 teaspoon vanilla paste
4 large eggs, at room temperature
2 cups whole buttermilk

Preheat oven to 350°F. Butter three 8-inch round cake pans and line with parchment paper, then butter the parchment.

Sift together flour, baking powder, baking soda and salt in a medium bowl set aside. In a large standing mixer, beat butter and sugar at medium speed until pale and fluffy, then beat in vanillas. Add eggs, one at a time, beating well and scraping down the bowl after each addition. At low speed, beat in buttermilk until just combined the mixture will looked curdled. Do not freak! This is the way it does. Add the flour mixture in steps, mixing until each addition is just incorporated.

Spread batter evenly into prepared cake pans, then bang pan on counter to remove air bubbles. Bake until light golden color and when a tester inserted in center of cake comes out clean, 30 minutes. Cool in pans on a rack, and then run a knife around the edge of pans to release the cake. Invert onto wire racks, cool completely, once cool ice cakes.

Chocolate Coffee Icing

4 sticks of unsalted butter, softened
3 tablespoons of whole milk
12 oz of semisweet chocolate
2 tablespoon vanilla
3 cups sifted powdered sugar
1 teaspoon coffee powder

Melt chocolate on a double boiler over simmering water. Stir until smooth and cream and remove from heat. Let cool completely before going to next step.

In standing mixer on medium speed cream the butter until really light and fluffy about 3 minutes or more. Add the milk and beat until smooth then add the melted chocolate and beat well for another 2 minutes. Add the vanilla and coffee and beat another 3 minutes. Gradually add the powdered sugar and beat on a low speed until nice and creamy. Ice your cake and refrigerate for a while to set then serve.


This is my baby…yes today May 23, 2012. I do have a better pictures but this was taken today and I want one from today! Happy Birthday sweetie…love you! It was taken on a beautiful day in the setting sun!

This was taken way back when…We had gone to the Atlanta Botanical Gardens for the day when he was around 4, isn’t he the cutest little thing? He was such a sweet boy and still is..they grow so fast cherish each and every day! Happy Birthday dear Thomas momma loves you!
