“The Cutest” Easter Cupcakes

These are the cutest little cupcakes. I put the cupcakes in an ole timey cardboard egg carton and this just makes them so cute. I color them like Easter Eggs and the children go wild over them adults too because they are so stinking cute!! I have 2 different cupcake recipes I love one Magnolia Bakeries in New York and I have used it for years and it always turns out lovely. The other recipe I love is George Town Bakery’s in DC. We stood in line there for 1 hour to get cup cakes and I hate to say this but it was WORTH it….oh goodness back on task here. This recipe makes a lot of them good thing if you are having kids they will go fast. I do like the taste better with a chocolate butter cream icing. I did save half of the cupcakes and do just that…but this is by far the cutest and for Easter awww better than a colored egg Fur Sure. Don’t you just love how cute they are…I do!! I get tickled just lookin at them.

Cupcake

1 1/2 cups self rising flour
1 1/4 cups all-purpose unbleached flour
2 sticks unsalted butter ~ Softened
2 cups sugar
4 large eggs
1 cup whole milk
1 teaspoon vanilla

Preheat oven to 325
line muffin tin with cupcake papers ~ I used mini made 6 dozen

In a small bowl combine flours, set aside. In a standing mixer cream butter until nice and smooth then add the sugar a little at the time and beat until light and fluffy about 3 minutes. Add eggs one at the time beating well after each egg. Using a rubber spatula scrape down the side of the bowl. Add the dry ingrsdients in three parts , alternating with the milk and vanilla. Mix until it is just mixed in and do not over beat. I put the batter in a pastry bag and this makes so easy to add to the muffin cups easy with any mess.

A spoon or ice cream scoop will work for filling the batter in the muffin papers as well. Bake for 14 minutes or till done in center do not over bake will be dry.

Icing

2 1/4 cups confection sugar ~ sifted
2 tablespoon light corn syrup
3 tablespoon whole milk
food color ~ I use powder or gel

I used one batch of icing for all the cupcakes I divided into 6 small bowls after it was all mixed up and then died them the colors of Easter Eggs and dipped them in and let an excess drip back in bowl. I topped them with candies and let them dry and time for your close up my little pretties!! These are great for a display…remember my mom has a store so you can sit them out and they look nice for a long time.

    Angela, you’ve outdone yourself with these cupcakes! I’ve just gone out and bought everything you recommended to make them! Love, love your directions, and photos! They are just too cute – I’m a quilter, not a baker, and even I want to make them! Thanks for the links and product info – very helpful! Great job, can’t wait for more of your ideas!

    These are GORGEOUS! I would really like to make these for Easter but my question is this: Does the icing dry enough to be touched and not all gooey? …meaning …will it crust and be hard enough to handle without making a mess, sorta like a soft fondant or crusting buttercream?

    awww Thanks!!
    Yes, these do harden up this icing is almost like a royal icing. After about 3 hours they are pretty firm to the touch. Yes, Like a fondant or crusting buttercream. I think you will love them they turn out cuter even in person. So, so cute !! I do these for baby showers too in either pink or blue…just another idea. Hope you enjoy them and thanks for visiting!

    These are just plain ole paper egg cartons from the grocery with the tops cut off. I remove the top since it has all those logos on them..yuk! Then I cut the bottoms in half again.
