Old Fashion Iced Easter Bunny Cookies

Awwww aren’t they the cutest little things? I grew up in a little tiny town in Mississippi and there was an ole timey bakery there they had the best iced sugar cookies. This is a recipe I worked on for a long time trying to get just like theirs..but, a little better. They are great for all sorts of holidays, birthday, bridal showers any thing really. I started making them like this years ago with the little bows and everyone goes crazy over them…simple yet so, so cute. I entered them in a Martha Stewart competition years ago now I see she is making the same thing in her line at Michael’s. Wonder where the idea came from? huh I wonder? Same colors too!

Cookie

2 sticks butter
1 1/4 cup sugar
1 teaspoon salt
1 1/2 teaspoon baking powder
2 teaspoon vanilla
1 large egg
1/4 cup sour cream or heavy cream
3 tablespoon cornstarch
3 cups all purpose unbleached flour

In a standing mixer cream butter, sugar, salt and baking powder until light and fluffy. Then add vanilla and egg beat well until blended light and fluffy. Sift the cornstarch into the flour. Add half the flour and sour/cream to the butter mixture mixing in completely. Add the rest of the sour/cream and flour, mix until well incorporated.

Divide into 2 round disk wrap and put in the refrigerator for 30 minutes.

Heat oven to 350. Roll cookies out on a floured surface. Bake cookies on a parchment paper lined baking dish. I roll the cookies rather thick I like them about 1/8 inch thick.


I bake the cookies for 10-14 minutes. Let cookies cool completely on a wire rack before icing.

Icing

2 1/4 cups confection sugar ~ sifted
2 tablespoon light corn syrup
3 tablespoon whole milk
food color ~ I use powder or gel

In a large flat bowl mix until all the lumps are gone and well mixed. I let this sit a while to let the bubbles work their way to the top other wise you tend to get lots of bubbles in your icing later. Like 10 minutes. Make sure your bowl is large enough to dip your cookie in.

Dip cookie, let it drain, letting excess drip into icing bowl. I then place on a rack on a cookie sheet to cut down on the mess. I let these dry for at least one day other wise they will stick to one another.

I make my own little bows out of a cute ribbon ~ this time checked ~ pink, blue and orange. I make a head of time so they are ready to stick on.

I place any bows ~ candies on while they are just iced so they stick and stay on. These cookies bag well and look great for party favors.

    Molly…this makes about 36 cookies. I make bunnies and chicks out of the same batch of dough. I do make the cookies rather thick. They are so cute and so good, I love them! Enjoy!! Angie

    Angie, Please tell me where the cornstarch goes. I made the cookies and left it out and the cookies were fine. I would like to know where it goes, the cookie or the frosting? Thank you!! Loved the ribbons.

    Tammy, the sticks I use are 1/2 cup. The recipe is for 1 cup butter. I hope this is clear…or clearer. Enjoy Angie

    Would like to try this icing on my sugar cookies. If I cut the cookies a bit thicker will it work. Have your tried it on other recipes then the sour cream one. They so cute!!!!

    Helen, This icing is very versatile I have used it on many things, other cookies and gingerbread houses. I would think it would work, but I will say this is the best combo out there…the icing is very sweet so if your cookie recipe is really sweet it will be overly sweet. I will say this is a great cookie. Easy to work with and always turns out great. Then the best part it taste together. Happy Baking Angie
