Home Made Chocolate Truffles
There is a little place not to far from my home and I just love their chocolate truffles. They are so rich and creamy. They are a really rich dark chocolate but they are not bitter. I like a dark but smooth chocolate. Just because it is dark does not mean it has to be bitter. To me if it is bitter ~ then they have brunt the cocoa bean during processing. I love a smooth silky taste. These have this ~ smooth creamy buttery taste. Oh how I love them, well they are quiet pricy to just go in and buy them by the volume I would like to have. So….I took a classes from the Master Chocolatier himself what a wonderful treat. I learned so many wonderful new things…one thing that I learned they are worth what you pay for them…a lot of work goes into making them correctly and to make them soft and creamy. Plus this type of chocolate is not cheap. You know it is like your momma taught you…you get what you pay for….right?
Home Made Chocolate Truffles
1 1/2 cup heavy cream 40% butter fat
1 1/2 pounds Peter’s Dark Chocolate~ chopped fine
1 teaspoon butter
1 cup powdered sugar
1 cup cocoa powder
Bring cream and butter to a boil pour over chocolate, mix until chocolate is melted and creamy. Keep mixing so it will be really soft and creamy. I put in fridge for 3 minutes pull out and mix again repeating this over and over until it will stand up. I put in a half sheet baking pan to cool
Cut into = squares and then roll in powdered sugar. Then roll into cocoa this is somewhat difficult unless you have seen it done. Keep powdered sugar on your hands and cocoa at all times. This helps to keep them from sticking.

Andrew, I loved that little shop….I will miss them! I do I have the croissants on the blog as well. I think over the years I did take all of their classes. I wish them all the best and hopeful the daughter will open a new location soon. Smiles, Angela
