Cheese Straws

Cheese Straws are great thing to have around during the holidays in case some one stops by so you have something to offer with a glass of wine. Cheese straws are a very southern thing. I have about 100 different recipes, all the same and then all different in one way or another. These are light almost like a puff pastry with a light cheese flavor and just a hint of heat…they are great try them. I stick them in a mason jar with a bow or burlap wrapped around to dress it up.

Cheese Straws

6 oz shredded sharp cheddar cheese
3/4 cup flour
1/4 cup soften butter
1 tablespoon heavy cream
1 teaspoon salt
1/2 teaspoon cayenne pepper

I use the food processor for the whole recipe, making this very easy and quick. I weight my cheese on the scale and then grate in the processor. Then add the remaining ingredients and run until it forms a ball. Once it forms a ball I remove and roll out on parchment paper with a little flour.

Roll out to 1/4 inch thickness. I then cut with a pizza cutter and a clear ruler. Cut them into strips move to baking sheet then cut yet into smaller pieces. Place on a baking sheet lined with parchment paper.

Bake at 350 for about 15 minutes until golden brown. Leave on baking sheet until they are completely cooled. When putting in the mason jars I like them all different shapes and sizes. When it is a fancy party I make them all the same size.

    Really soooo good!
    I used sharp white cheddar and maybe 1.5TBSP of light cream. Worked great and soooo easy. Can’t wait to make them again.
