Hey…..Listen up Fresh Market is running a special this whole month. These specials are only on Tuesdays. Lobster tails for $5.99 so run on over and get some. They are nice and big lobster tails, some of mine were one pound which is a nice size not little whimpy things. They tasted wonderful I might add too. I will be buying several this Tuesday and putting them in the freezer for later use. Dang, they are good ~ I love them just steamed severed with fresh lemon and drawn butter yum! But, I could eat 9 of them and then dinner would be in the expensive category right $$$ ? oh dear me…. moderation ~ right grrr okay 2 for me!! This is an easy peasy meal nice and quick too.
You can steam them or boil them if you do not have a steamer. If you boil them put lots of salt in the water. Trust me on this..K like 3 tablespoons to a large stock pot. They live in salt water and taste best a little salter. The lobster pot restaurants boil them in sea water with sea weed..really. When I got my tails they were still frozen, let them thaw out. Cook them right before you plan to eat. You want a pot that they can be covered in water completely if boiling them. They will cook about 3-5 minutes not long. Have water steaming hot or boiling before adding your tails.
The way you tell if they are done is this: they will curl up take your tongs and pull from the water or steam and straighten the tail and if it curls right back up it is done if it stays straight put back in for another minute or two.** An important thing do not over cook these things ~ why, then they are like a rubber ball yuck and that is not good to eat at all….got it !
Lobster tails – one per person
Pugra ~ european butter
1 package of pugra butter
Place butter in a small sauce pot and bring to a small rolling boil/simmer for one to two minutes and leave on lowest setting. You do not want to burn or brown. Just heat ~ really with out getting to technical for my Non~cooky friends. You want the solids to separate. When you use these nice european butters there really isn’t any. If you use a different butter there will be a white matter and you skim this off. Just leaving the pure yellow gold goodness.
Serve butter in little individual dishes one for each person.
Take your tails and cut in half with a large sharp butcher knife.
Serve with a half of lemon.
I served this with the fall salad, a rice pilaf. A glass of ice cold procescco wine yummy!! You could do a risotto instead of the rice pilaf but I was in need of time so I made the easer of the two. Still a wonderful dinner.
