Broccoli with Spicy Green Sauce

November 10, 2011 by Angie Leave a Comment

This is such an amazing sauce ~ OH MY GOODNESS !!

This is the amount needed for the steamed whole bunch of broccoli…but trust me and make at least a double recipe ~ really!! I have now been putting this on everything…okay think out of the box. Like I made the broccoli as below and chopped a little finer, grilled chicken and boil a pot of pasta and tossed in a double recipe of the sauce and some parmesan cheese mix all together and wal la ….dee ~ lish !! A whole other dinner !! Health and yummy too!!

Broccoli Sauce

1/2 cup of heavy cream
2 tablespoons butter
3 tablespoons green sauce ~ recipe to follow

1/2 teaspoon red pepper flakes
pinch salt and pepper

Take the cream and place in a small sauce pot and bring to a simmer add butter and and red pepper flakes simmer until thicken somewhat. Once nice and creamy add your green sauce, slat and pepper to taste. Plate your broccoli and pour over the top.

Broccoli

Take your broccoli heads and steam them until just tender.

Green Sauce

2 cups full of flat leaf Italian parsley ~ leaves only no stems
4 large cloves garlic, peeled
1 cup olive oil
1/4 cup red wine vinegar
2 tablespoons water
1 teaspoon salt
1 teaspoon pepper ~ ground mixture of green, red, white and black pepper

Start the food processor running and then drop the garlic in the shoot and it will mince perfectly this way. Then place the parsley, red wine vinegar, water, salt and pepper in the processor, run and puree until all chopped and mixed well together. Then add the oil through the shoot and it will become a nice thick sauce. There is more complete instructions on this in another post.
