This turned out so well…one of my last minute throw all the seasonal thingies in a salad and some are fabulous and some are great and well some are not so great ~ we won’t post those ! K This is one of them that was great !! All the yummy things from this time of the year and to make it over the top I put Maple Syrup in the dressing…making it really all about fall!! YUM! The flavors turned out really well the only thing I would add would be to put some fresh pomegranate seeds in it as well. Wow, that would make it even prettier…won’t it! I would not change any thing!! Really!! So experiment with the seasonal fresh stuff in your salads..go head try it!!
Arugula Salad with Goat Cheese, Roasted Butternut Squash & Toasted Pumpkin Seeds
Dressing
2 cloves of garlic
1 teaspoon dijon mustard
1 tablespoon champagne vinegar
3 tablespoons pure maple syrup
1/4 cup of olive oil
salt and pepper
Make in food processor, turn on and drop the garlic in the shoot and it will mince finely. Turn off and add everything but the oil, turn the processor back on and once all is mixed well, slowly add the olive oil in a small stream and run until all is incorporate. Set aside.

Butternut Squash or Acorn Chopped in small cubes ~ follow directions on another post!

Roasted Squash the directions are given on another post. This is rather easy to do. Make sure it cools to the touch before adding to the greens or it will wilt them. Wash Arugula and fill the plater with a large amount. Then add your desired amount of the toppings. Dress with dressing right before serving. Enjoy!!
Okay ~ it was so good we wanted to make it again and dang it !! I did not have any squash but I had sweet potato. I used it and it was just as good or better!! Amazing fall salad !!
