My Favorite Chocolate Cake

Chocolate Cake

1 3/4 cups all~purpose flour ~ King Arthur
2 cpus sugar
3/4 cup cocoa
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons baking soda
1 cup whole buttermilk
1/2 cup veggy oil
2 large eggs
1 teaspoon vanilla
1 cup fresh hot strong coffee


Line 3 cake pans with parchment paper ~ butter and dust with flour ~ preheat oven to 350

Ok, on this cake I throw all the rules away with this recipe and it works really well ~ I put all the dry ingredients in the mixing bowl with the whisk attachment and mix well ~ mixing all the dry until looks like a brownie mix ~ dry light brown color.

Then I add all the wet ~ start with the hot coffee then the buttermilk, then the rest of the wet ingredients ~ do not want to cook the eggs right ~ mix until all mixed ~ do not over mix ~ run a spatula around making sure all is mixed well. Pour into the cake pans and bake for about 35 minutes until a cake tester comes out clean. Cool on rack and then ice ~

Icing

6 oz semi sweet chocolate melted ~ I used Bakers

2 sticks butter room temp

1 egg yolk

1 teaspoon vanilla

1 1/4 cups powder sugar

2 tablespoons hot strong coffee

In a mixer with paddle attachment ~ cream butter and sugar until light and creamy. Add other ingredients and mix well until light and fluffy ~ ice cake and eat!  You can make as shown above which is a 3 inch cake in two layers.For a dinner party you can make individual cakes as seen above or you can make in an 8 inch three layers for family seen below.
