Andrew Jackson Salad

This is amazingly easy salad. I have had more request for this salad recipe. I know it sounds so so…right well, believe me it is really good. It is easy, quick and different try it. This is a salad I have been making for longer than I care to tell. We all love it!

Andrew Jackson Salad

5 oz bag baby spinach
8 strips of crispy bacon
2 hard boiled eggs
2 avocados

Dressing
5 tablespoons olive oil
3 tablespoons white wine vinegar
1 teaspoon dry mustard
salt and pepper

Add all dressing ingredients in a small mason jar and shake until mixed well.

Cook bacon, drain and let cool. Wash spinach well, dry add to platter. Top salad with chopped bacon, grated egg, diced avocado. Add dressing right before serving.
