Souvlaki is a Greek dish with small pieces of meat that are skewered and then grilled. They may be served on a bed of rice or on a pita. We all like pork tenderloin. You could use lamb or beef or a combination of the three. Then we add it to a pita. Making it a gyro with lettuce, tomatoes, sliced onion and tzatziki sauce. Tommy even loves to add good feta.Marinate Recipe 1 cup of dry white wine 1 lemon ~ juice and zest 4 minced garlic cloves 2 tablespoons fresh chives chopped finely 1 tablespoon fresh Greek oregano salt and pepper to taste 1 large pork tenderloin ~ chopped in small pieces
After you marinate the pork, I grill the pork on the green egg. You could grill on any grill or even bake in the oven. Once your meat is done, I toast my pita and make a sandwich. You can find the tzatziki on another post. Once all is added to your pita roll, eat and enjoy.
