Caramel step 1 1 1/4 cup sugar 3/4 cup heavy cream 2 teaspoons Maldon Salt 1 tablespoon vanilla ~ I used vanilla paste ice cream base
Heat Sugar in a dry heavy bottom pan over a medium heat, stirring with a wooden spoon or fork to heat evenly, until it starts to melt then stop stiring and swirl pan so the sugar metls evenly and contiue cooking until it is a dark amber color. Carefully add the heavy cream this will splatter, cook stirring untl all the caramel has dissolved. Transfer to a heat proof jar and stir in the salt and vanilla paste ~ we did not use as much as they requested. Chill to room temperature. Make ice cream base then add this to base. Ice Cream Base 1 cup whole milk 4 large eggs 3/4 cup sugar 2 cups heavy cream heat the milk in a sauce pan over medium low heat. Prepare an ice bath by setting a 2 quart bowl over a larger bowl partially filled with ice. Set a trainer over the smaller bowl and set aside In a separate bowl whisk together the egg yolks and sugar until a very pale yellow in color and the sugar has dissolved. Gradually pour the warmed milk unto the york mixture whisking constantly. Pour the mixture back into the same sauce pan you used to warm the milk. Cook for 3 -5 minutes, stirring constantly until the custard thickens and coats the back of a wooden spoon. Strain the custard into the top bowl of the ice bath to stop the cooking process. Add the heavy cream and stir over the ice bath until cool. Coved the bowl and chill thoroughly. We put in the freezer for 10 minutes stirred really well left in another 5 minutes stirred again and then another 5 minutes more. Then we removed the ice cream base and put in the “Krups Ice Cream Freezer” and started running, once ice cream was firm we added only half the caramel mixture from step 1. We all though it was more than enough. We saved the rest and added a little to the top of each serving! Once we ran the Krups and it was nice and frozen in the machine we removed it and then put in a container and put in the freezer for another 30 minutes to hardened up. This was amazing This was some of the best home made we have ever made. Thomas was the one that made it, really he did from start to finnish. So, you too can make this.
