Blueberries usually come in for us around July 4th or later. They will be huge if we have had a lot of rain in the spring. I pick them from my parents home in Mississippi. They have about 12 bushes and each one has a different taste. Some are sweet, some tart, some really big, some wrinkled….we call the wrinkled ones ole ladies. Blueberries have to have a male and female bushes to produce berries. Once you have several bushes then you have volunteers. What is a volunteers ~ it is a bush that has just come up on it’s own. The berries ripen at different times which gives you berries for about a good three weeks long. I have found if you pick them and put them in the refrigerator with out washing. They last much longer, washing them right before eating. We love the huge ones.
We ride the golf cart over to the back 40 and pick a large bucket of berries. Or until the heat about kills you. We have a following each time we go Jake, Molly, Woody, and Maggy. Jake and Molly just love the berries. They will eat any you drop and will eat your whole bucket if you put it down silly dogs. Molly is the worse she loves them.
Then there is Maggy she does not care for the blue berries at all. They all fight for the front seat of the golf cart just like the kids fight for the front seat of the car ~ why is this? Many times leaving you no place to even sit on the golf cart.
But, I like them going with me over to the blue berry patch. I know when they are with me I am safe. See in the country on a farm there is critters I am afraid of , snakes yikes. So, when I have all the doggies with me I do not worry about snakes. Then I have built in entertainment too. They will make you laugh for sure. You do have to watch that Molly dog or she will eat all your hard work and quickly too.
Blue Berry Delight
We have to come up with many ways to eat and enjoy all the berries we pick this is a new one I made up this year. We call it Blue Berry Delight. I was going to put a little dollop of whip cream and take a picture but oh my they where gone before I got a snap of them.
This recipe made 12 jars and one 13 inch pan. I used the jars for us and took the large pan to friends for them to enjoy.
Layer # 1
1 cup all purpose flour
1 stick butter ~ room temp
1/4 cup powdered 10 X sugar
1 teaspoon vanilla
1 cup chopped pecans
Cream butter and flour together until light and fluffy. Then add sugar and vanilla. Mix well then add pecans and mix until mixed in.
Press mixture in the bottom of 12 small jelly mason jars. This makes enough for 12 jars and a 13 inch baking pan. We eat the 12 jars and I will take the pan to a friend to share. I bake these for 20 minutes at 350. Let these cool completely before the next layer is added.
Layer # 2
1/2 stick butter
2 – 8 oz cream cheese
2 cups powdered 10x sugar
1 teaspoon vanilla
1 – 8oz cool whip ~ they now have with real whipped cream
Let the butter, cream cheese get to room temperature then cream together until light and fluffy. Add the sugar ad vanilla mix well. Then fold in the cool whip.
Once all mixed, I put in a large pastry bag. I use a large round tip, this makes it easy to get into the jars neatly. You can use a large zip lock bag if you do not have pastry bags. I just spread the layer on the baking pan with a spatula evenly. Then I put both into the refrigerator until nice and cold before adding the 3rd layer.
Layer # 3
4 cups fresh blue berries
1 cup sugar
1 cup water
1 heaping tablespoon cornstarch
2 teaspoon vanilla
4 tablespoons butter
pinch of salt
Mix water and corn starch together in a medium sauce pot while still cool. You must do it while it is still cool or it will become lumpy. Once all this is mixed well add 3 cups of blue berries, sugar, vanilla and butter to the pot and bring to a simmer and simmer until this is very thick and bubbly. It should cook about 15 minutes at least. My stove does cook very hot and fast so yours may
take a little longer to reach this stage. Once this is done then add to jars and then to the pan and spread evenly. Then top with the fresh berries that are left. I put a dollop of fresh whipped cream and one berry on top for the jars. Then for the one in the pan I slice and top with a dollop when I am serving and one berry.
